A blue cheese from the United Kingdom. Shropshire Blue is one of the most striking blue-veined cheeses in existence. The warm orange color of the cheese body, combined with the blue-green mold veins, makes this British cheese a visual showstopper on any cheese board. But it's the flavor that really leaves an impression: creamy at the base, finishing with a distinctly bold, full-bodied aftertaste.
The semi-hard texture is firm enough to slice beautifully yet crumbles wonderfully when you break it apart. Made from pasteurized cow's milk and vegetarian-rennetted, this cheese suits a wide audience. Remarkably versatile: just as delicious on its own on a charcuterie and cheese board as it is melted into warm dishes.
Pairs well with: a glass of port, stout, or a full-bodied red Burgundy.
