Blue Stilton is one of England's great cheese classics, protected by a PDO designation. This blue-veined cheese has a character all its own, setting it apart from its French and Italian counterparts: crumbly yet creamy, salty and piquant with a surprisingly soft, buttery undertone. The blue veins spread in a natural pattern through the pale, creamy paste.
Stilton is traditionally served at Christmas in England, but it deserves a spot on the cheese board all year round. Its complex flavor pairs beautifully with sweet contrasts and holds its own alongside a bold wine or port. Served in chunks, with a walnut or a drizzle of honey, Stilton is at its very best.
