Blu'61 is a blue-veined cheese that defies all expectations. This Italian cheese, made from pasteurized cow's milk, combines the bold character of blue mold with the surprisingly sweet, fruity notes of passito wine and candied cranberries. The result is a cheese that sits somewhere between a charcuterie and cheese board pick and a dessert, and shines in both roles.
The texture is soft and approachable, with blue veins that add just enough bite to keep the sweet fruitiness in balance. After around two months of aging, the cheese reaches exactly the point where all the flavors meld into a harmonious whole.
