About this cheese
Manchego is Spain's most famous cheese and one of the most celebrated sheep's milk cheeses in the world. Made on the plains of La Mancha from the milk of the native Manchega sheep, it has a firm, compact character with a bold, nutty flavor. The distinctive zigzag pattern on the rind is a legacy of the traditional woven baskets in which the cheese was pressed.
The texture is firm and easy to slice, with a slightly crumbly edge in longer-aged versions. The flavor is full, nutty and lightly sweet, with the characteristic richness of sheep's milk. In Spain, Manchego is traditionally served as part of a tapas spread, drizzled with olive oil and accompanied by membrillo (quince paste). It's also an essential classic on any cheese board.
