Every cheese deserves the right storage. With these tips you get the most out of flavor and shelf life.
Storage tips by cheese type

Hard cheese
Farmhouse cheese, Gouda, Gruyère, Parmigiano
- Store in cheese paper, not plastic wrap
- Place in the vegetable drawer of your fridge
- Remove from fridge 30 minutes before eating
- Only cut when you're about to serve the cheese

Soft cheese
Brie, Camembert, Chaource
- Store in original paper or cheese paper
- Keep away from strong cheeses
- Bring to room temperature before serving
- Eat as soon as possible after opening

Blue cheese
Gorgonzola, Stilton, Roquefort
- Wrap tightly in aluminum foil
- Store away from other cheeses (strong smell)
- The mold is edible and desirable
- If dry patches appear: dab with damp cloth

Goat cheese
Chèvre, bûche, aged goat cheese
- Store in cheese paper or parchment paper
- Fresh goat cheese: consume quickly
- Aged varieties have longer shelf life
- Store separately due to smell

Sliced cheese
Pre-packaged slices, freshly cut
- Vacuum-sealed keeps the longest
- After opening, store in cheese paper
- Don't let slices stick together (put paper between)
- Consume within a week of opening
Why cheese paper?
Every order comes with free cheese paper. Cheese paper is specially designed to let cheese breathe without drying out. It regulates moisture and prevents condensation, so your cheese stays delicious longer. Plastic wrap and household foil are not good alternatives: they seal the cheese airtight, causing it to sweat and spoil faster.
Freezing cheese
Not all cheese is suitable for freezing, but some types can go into the freezer just fine.
Can freeze
- Hard and extra hard cheeses (Gouda, Parmigiano)
- Grated cheese
- Farmhouse cheese in small portions
Don't freeze
- Soft cheeses (Brie, Camembert)
- Fresh cheeses (mozzarella, ricotta)
- Blue cheese
How to freeze?
- 1Cut the cheese into portions of max 200 grams
- 2Wrap airtight in freezer bag or vacuum
- 3Write the date on the packaging
- 4Freeze for max 3 months
- 5Thaw slowly in the fridge (not microwave)
