About this cheese
A goat cheese from France. The Cabrissac is a French goat's cheese in the classic bûche shape: an elegant log with a soft, creamy white rind. Beneath that rind lies a creamy, mild interior with the pure, fresh flavor that's characteristic of great French chèvre. The texture is soft and spreadable as the cheese ripens, with a firmer core that gradually becomes more creamy.
French goat's cheese has a different character than Dutch: a little lighter, fresher and more refined. The bûche shape makes the Cabrissac especially well suited for slicing and serving on toast or in a salad. At room temperature, the creamy texture really comes into its own.
Pairs well with: a dry Sancerre, Loire wine or a light citrusy beer. Delicious on toast with honey and walnuts, in a salade chèvre chaud, or on a cheese board with fresh herbs. Compare with our Mild Goat's Cheese (Dutch) to taste the difference, or combine with the La Bouygette.
