Jersey cows produce less milk than regular cows, but what milk it is: extra rich in fat, protein and minerals. You can taste that unique composition right away in this mature cheese. The flavor is fuller, creamier and more complex than a regular Gouda, with an almost buttery richness that stays with you.
After several months of aging, the cheese has developed a beautifully balanced character. The typical nutty notes of a mature cheese are enhanced by the natural richness of the Jersey milk. The texture is supple and slices cleanly, with just enough firmness for on bread or the cheese board.
What makes Jersey milk so special?
Jersey cows are one of the oldest and smallest dairy breeds in the world, originally from the British island of Jersey. Their milk contains up to 30% more fat and 20% more protein than that of the average Holstein-Friesian. That higher fat content creates a naturally creamy, full flavor you won't find quite the same way in any other cheese. Jersey milk also contains more beta-carotene, which gives the cheese its characteristic golden-yellow color.
