This sheep's milk cheese comes from Hijlaard in Friesland, where Lacaune sheep graze on the region's rich, heavy clay soil. The grass grown on this land gives the milk an exceptionally high fat content and protein richness, which you can taste immediately in the cheese: wonderfully creamy, smooth and surprisingly mild.
