A washed rind cheese from Belgium. Chimay Poteaupre is a semi-hard washed-rind cheese made at the Trappist abbey of Chimay in Belgium. The monks wash the rind regularly during aging, which gives it its distinctive orange-brown crust and a full, creamy flavor with earthy undertones. This is a cheese with a story rooted in centuries of monastic tradition.
The texture is supple and soft, with a yielding center that really comes into its own at room temperature. The flavor is complex without being overwhelming: earthy, slightly sweet, and with a subtle Chimay signature that cheese lovers will recognize instantly. It pairs exceptionally well with the famous Chimay beers.
Goes well with: a Chimay beer, of course (Bleue or Grand Reserve), but also a bold Belgian tripel or a glass of Burgundy. Delicious on a cheese board with Belgian bread, or melted over a croque monsieur. Pair it with Passendale for a Belgian cheese duo, or with Epoisses for another washed-rind pairing.
