
Ubriaco
Ubriaco is a semi-hard Italian cheese from Veneto, made from cow’s milk. The name literally means “drunk” in Italian, because during aging the cheese is submerged multiple times in red or white wine, often together with grape skins and seeds. This gives the rind a deep purple or reddish-brown color and infuses the cheese with fruity, spiced wine aromas. The texture is firm yet creamy, and the flavor combines nutty notes with a subtle tannic edge from the wine.
