Simmentaler Bergkaas is a Swiss alpine-style mountain cheese made from cow’s milk sourced from mountain regions such as the Simmental valley in the canton of Bern. This cheese is firm and full-flavored, with a pronounced nutty undertone and a lightly herbaceous finish that is characteristic of alpine milk. It typically ages for several months, developing a compact, lightly crystalline texture. It’s a characterful table cheese that also melts beautifully.
