Manchego
Manchego is Spain’s most famous cheese, made from the milk of the Manchega sheep from the La Mancha region. This extra mature version speaks for itself: the ivory-yellow paste is firm and compact, with the occasional small hole, and breaks with a short, grainy bite. The flavor is full and nutty, with that characteristic sweet, mild note of sheep’s milk that stays with the cheese even after aging. Also unmistakable is the rind, with its embossed crosshatch pattern that is the hallmark of this cheese.
