Want to know how Gouda Holland cheese is made?
It all starts on the farm and in the pastures of our beautiful country. There, farmers take great care of their cows, which is essential for the quality of the milk.
When the milk arrives at the cheese dairy, it’s checked again for quality and composition before entering the cheesemaking process. The first step is adding a starter culture to the milk. This gives the cheese a great flavor and a long shelf life. Next, rennet is added. The rennet causes the milk proteins and milk fat to clump together into curds. These curds are then firmly pressed into round cheese molds. The liquid left over is called whey.
The firmly pressed cheeses are then rolled through a brine bath, a large reservoir of salt water. After soaking for a while, the cheeses are given a coating layer, which extends shelf life and prevents them from drying out. They are then slowly ripened on wooden shelves in the cheese warehouse, where they develop their characteristic flavor.
