Noord-Hollands 35+ spicy

This Noord-Hollands cheese has been given the time to fully mature. As an extra mature 35+, it’s firm and semi-hard, with the occasional fine crystals you find in longer-aged cheeses. The spicy side comes through right away on the palate: a bold, savory bite that lingers. The texture cuts cleanly and crumbles slightly at the edges.

It’s made from pasture milk and, at 35% fat in dry matter, a little less rich than a standard 48+, which actually lets the character come through more sharply. A cheese for anyone who likes bold flavors: great in cubes on the charcuterie and cheese board, or simply a slice on bread when you’re after something with a kick.
