Noord-Hollands mature is a semi-hard cow’s milk cheese with a fine balance between creaminess and character. Not too mild, not too sharp: just that calm, full flavor that lingers pleasantly in the mouth. The texture is firm yet supple, with a taste that reveals slightly fuller, lightly spiced notes the longer you savor it. This cheese is made from 100% pasture-raised milk and carries the PDO certification for Noord-Hollands cheese.
