
Neufchâtel
Neufchâtel is one of the oldest cheeses in France, with a history stretching back to the 6th century. Its most recognizable shape is the heart, though it’s also made in other forms. The soft white rind covers a firm yet creamy interior with a lightly salty, mushroomy flavor. Neufchâtel comes from the Pays de Bray region of Normandy and is made from cow’s milk. It’s slightly firmer and drier than a Camembert, with more character.
